Apple Cobbler Cupcake

So December's Cupcake of the month is Apple Cobbler Cupcake. I got the recipe from here and I changed nearly all the ingredients. They turned out good, good enough to be eaten before I got to frost them. So no frosting this month.



Apple Cobbler Cupcakes

About 12 Cupcakes

1 1/2 cups gf flour mix
1 1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon guar gum
1/2 teaspoon ground ginger
1/2 cup canola oil
3/4 cup brown sugar
1/4 cup sugar
8 ounces of pumpkin puree
1/2 cup mayo (or yogurt)
1/4 teaspoon lemon extract
1 diced apple

1. In a medium-sized bowl, whisk flour, baking powder, baking soda, guar gum, and ginger. Set Aside.
2. Beat in oil and sugars in a large bowl until light and fluffly.
3. Beat in pumpkin, mayo, and lemon until blended.
4. Mix in flour mixture.
5. Fold in apples.
6. Divide evenly among 12 cupcakes.
7. Bake at 350 for 25 minutes.

Everyone loved the cupcakes here. I need to tweak the recipe a wee bit. It's still not 100% but that will come with time.

Hi Marci,

I have been gl free df for 12 years. Through the years we find ourself's being told Now we can things like vinger... I just wanted you to know that apples have a natrual gluten in them. Small traces but it is there. I have 4 kids two are under the autism spectrum. One with low f. autism now very high f. and one with Aspergers I have celiac. So, we are all very sensitive. Just wanted you to know. WWWW.Jenspadafora.com if you ever need any help. I am also going to start a gf df store soon. Not an online one...an acutal store.
