So I have been debating getting the new cookbook Cooking for Isaiah. Someone told me about the newest Taste of Home Magazine and how it has a few recipes from Cooking For Isaiah. So I got the magazine (well because I was going to get that anyway) And I saw the waffles, and wanted to try them. Mine didn't turn out like the photo in the magazine, but pretty close, I of course had to sub out a few things, but it's something I will keep working with until I get it right for us.
I won't post her recipe, but I will post what I did to her recipe.
2 cups gf flour mix (I used Cybele's)
1/2 tsp. Salt
1/2 tsp. Pumpkin Pie Spice
Egg replacer mixed with 1/4 cup sparkling water, warmed
2 tbsp olive oil
1-1/2 cup rice milk
1/2 cup pumpkin
1 tbsp Vanilla
I tossed it all into the mixer and then put them onto the waffle maker and cooked them. My recipe made 8.
