Vitiligo





Got Vitiligo?

My son does.
So long story short I noticed this on Cole and really did not notice or think anything of it. It was summer and he was out running naked or with a diaper. It was not until a friend had sent me a link that I realized that this is serious. So took Cole to the doctor and she said yes and sent us off to a Dermatologists. It took many months to get in of course. So today finally at the Dermatologist and he took one look at Cole and said this kid has Vitiligo he than left to get another Doctor he than came in and said Yep he has Vitiligo. They are now running lab work because Vitiligo, lupus, diabetes, and thyroid are all inter connected. So it is just a matter of time before everything kicks in.
So researching things, odds are when he had his seizure it kicked up Celiac disease and Vitiligo. I only noticed the Celiac because of all the poop coming out of him. The Vitiligo started in the diaper area and has spread to his face and legs, now arms. So far it has not touched the face. Vitiligo is an auto immune disease. So now we are researching that and debating on rather to treat or not. My son is only two we are talking about Steroids. so what if there are side effects, what if things get worse? What if the medicine brings out another auto immune issue? I kinda think we are going to let it be. This is my son and really I think he will be fine. As long as it does not hit the face. We worry about the face area.
So he is not to go out without sun screen as he could burn. And now we sit and wait for lab results. Going for the blood work my son was so good. He sat on my lap and sat there and watched what the nurses were doing, when they poked him he just jumped he never cried. Walking out he was telling everyone boo boo. And no one could touch his boo boo until late tonight.

Flop



So this is what I call a flop. But I am a guinea pig and willing to try almost anything baking wise. So I found a website called Better Batter and wanted to try and do the mix on my own. So this was posted to try.

1-1/2 C White Rice Flour
1 C Brown Rice Flour
2 C Tapioca Flour
1-1/2 C Potato Starch
1-1/2 TBS Potato Flour
1-1/2 tsp pectin
1-1/2 tsp xanthan

And it failed. It failed really badly. It was so runny unable to form anything. So we did doughnut holes I just plopped in the dough and hoped for the best. So they were crispy on the outside and doughy on the inside. So I will try the mix again in another recipe before I call it quits on this mix.

My Baby Is Four



So my baby is four. Although he tells everyone his almost 5. He had a great birthday party. He wanted a Monkey Party with all his preschool friends. And so we rented the gym, basically because you pay one fee and not pay by child. So we rented the gym and invited the whole preschool class all 20 something kids. About half of them came. And my son had fun, I had never seen this child have so much fun. The biggest smile I had every seen on his face. It was so worth it.

Baby cakes

"These are gluten free?" That came out of my husbands mouth. He kept saying WOW. The boys ate them up as well. So I think my newest recipe is a BIG hit. This is another one by me. Yeah!!! Maybe one day I will open up that GF Bakery?

Baby cakes (White Cake)

2 cups gf flour mix (I used Bette's gf mix)
1 1/2 cups sugar
3 teaspoons baking powder
1 teaspoon baking soda
1/2 salt
1/2 cup spectrum shortening
1 cup rice milk
1 teaspoon vanilla
4 egg whites

Combine dry ingredients in mixer bowl. Add shortening, milk, and vanilla. Mix well for 1 minute. Add egg whites and mix on medium for about one minute.

Pour batter into greased cupcake or cake pan. Bake at 350 for a cake about 30-35 minutes for cupcakes 20-25 minutes.

Cracking Good Sunshine Cupcakes




So I did it. I finally did it. I took a recipe I changed every single ingredient and it turned out well? Really, really well. I took this recipe and made cupcakes and only filled each cup about half full I would suggest no more than half full as they rise. Really rise.

The second these came out of the oven I had three kids in the kitchen begging for them. The baby alone ate a couple of them. Out of twelve there is one left for hubby to try when he gets home. So they are 6 thumbs up.

Cracking Good Sunshine Cupcakes

2 1/4 cups gf flour mix. I used Bette's gf mix
1 1/2 cups sugar
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup spectrum shortening
1 cup rice milk
1 teaspoon vanilla
2 eggs

Combine dry ingredients in mixer bowl. Add shortening, milk, and vanilla. Mix for about one minute. Add eggs, and continue to mix for a few minutes.

Pour batter into greased cake pan or cupcake pan. Should make 2 8-9 inch cake I did 13 cupcakes with this recipe. Bake at 350 for a cake about 30-35 minutes I think the cupcakes took 20 minutes? Now these rise, really rise so keep that in mind when doing your pans.

Update; Hubby loved them. Taste just like real cupcakes....

New Update on Cake

Husband loves it. Says it is one of the best cakes I have done yet! And can not understand why 2 of the 3 kids will not touch it. But happy the cake is all his? Go figure...

Update on cake

Well I served it for snack tonight, oldest kid said yuck! got second kid to try it. yuck! Got baby to try it he nearly ate half the cake. Really as I am cutting into this it looks more like a break???? I make try it like that and see what happens? I will post when hubby tries the cake and see what he says?

It Didn't Explode?

1-2-3-4 Vanilla Cake---I hope?

So usually when I experiment in the kitchen these days things come out OK. But a few months ago I was changing over a recipe and somehow messed it up and the cake exploded in the oven. So I really didn't want to try another vanilla cake. But we on the gf board were trying to figure out a recipe and so I am game for trying anything once? So here is what the cake looks like.
Now this is untested and I will update after someone in the house has tested it. I do not eat my own baking. I have never been one for cake and cookies.
Vanilla Cake
1 cup oil----I used 1/2 cup applesauce 1/2 cup oil
2 Cups sugar
3 Cups gf flour. I used 1 cup tapioca, 1 cup potato starch and 1 cup rice flour
4 eggs
a pinch of salt
a pinch of xanthan gum
a scope of baking powder maybe 1/2 teaspoon maybe more?
I did add a little baking soda
I than added enough water until it looked like our cake batter I think it was around a 1/2 cup. mixed well and bake at 350 for about 40 minutes I would start to watch it after 20 minutes as my stove is not perfect....
