Bread Ideas

So in the midst of Joann's yesterday I had a brain storm. This pan would be PERFECT to make bread in. Then the boys can have round sandwiches. Sometimes I amaze myself. So I bought two cake pans, (well I bought more then two, but don't tell hubby!) I bought a circle one, which I will now go back and buy at least 3 more, after using it today. These pans are from Wilton and you can probably buy them at any Joann's or Michaels.



I also bought a star pan for mini star sandwiches.

My oldest did a mayo, lettuce, chicken and cheese sandwich.


My middle child, God Love him, did a butter, sunbutter and cheese sandwich.


I used my bread recipe here http://threeboysandglutenfree.blogspot.com/2010/06/breadreally-good-bread.html   I think I baked for 13-15 minutes, the stars only about ten minutes. Just keep your eyes on them. Now go and get creative, baking gluten free bread shapes.

Bread...Real Bread...


So I have been working on my newest bread for about a month now. I keep tweaking and playing with it until one day my hubby said it was perfect and I better not tweak anymore. It's a really easy recipe and I can usually have it in the bread maker in about ten minutes. Yes, I said bread maker. I have done it both oven and bread maker, bread maker is easier because I will forget something is rising until it runs everywhere.
So I was at a friends house last night and I made this loaf because I wanted new people to try my bread and to give me honest feedback. Well I hope it was honest? I will say the loaf was gone within minutes. I was in shock that everyone liked it so much.
This bread stands up, this is the bread I made the grilled cheese sandwiches with. I have had so much fun with this bread. There is still some tweaking to do but I am happy with the way it is right now. Now to come up with a great name for this amazing bread.
Flour Mix is Cybele Pascal's
4 Cups Brown Rice Flour
1 1/3 Cup Potato Starch
2/3 Cup Tapioca Starch
Bread Recipe
Egg replacer enough for two eggs, 1/4 cup sparkling water, warmed for about 20 seconds in the microwave, mixed together and set aside.
Now I just dump everything else into the mixer.
4 Cups Flour Mix
2 Teaspoons Sugar
1 Teaspoon Guar Gum
1 1/2 Teaspoon Salt
2 1/4 Teaspoon Dry Yeast
1 Teaspoon Gelatin
1 Cup Rice Milk Warmed about 30 Seconds in Microwave
1 Cup Water Warmed about 30 Seconds in Microwave
2 Teaspoons safe butter or Olive Oil (I have used both)
1 Teaspoon Rice Vinegar
Egg Replacer Mix
Mix in a stand mixer until it looks awesome, about three plus minutes or so. I then pour into a bread maker and put it on the gluten free cycle. Now my mixer in my bread machine sucks so I have to pre mix in my mixer first.
Now the important part, after the bread machine beeps that it is done, I take it out and put it into the oven at 350 for an extra ten minutes. Just placing it on a cookie sheet.

Bread Challenge

So I did a bread challenge tonight. Stephanie on my gfcf board posted her bread and it looked really weird so I just had to try it right? I saw her recipe and thought I could help the recipe. So I thought I would do both recipes, kinda flying by my pants as I went on my recipe. So the first bread is Stephanie's recipe, and this is what her recipe looked like when I took it out of the oven, I will tell ya it looks nothin like her photo.


2 cups White Rice Flour
1 cup Brown Rice Flour
1/4 cup dry milk powder (I had to use Tapioca Flour)
3 1/2 tsp xanthan gum
2 tbs sugar
1 tsp salt
2 1/4 tsp yeast

Wet
3 eggs
3 tbs oil
1 3/4 c water (warm)

Mix dry together and than add wet to it slowly. Blend Slowly on low for 1-2 mins. Bake at 375 degrees for 60 minutes. Oops let rise for 30 minutes, before baking.


And so this one is my bread, using the recipe above and changing around a few things. I have to say I think mine looks and smells so much better, but that could just be me?


Here is my recipe:

1 tsp gelatin
1 tsp salt
2 1/4 tsp yeast

3 tbs oil (olive)
1 3/4 cups water (warm)

So here are the breads side by side. Mine is on the left and Steph's is on the right, I noticed the coloring right away, mine was more brown. When I did the dough Steph's was like cake batter which is what gf bread should be like, but mine I felt if I added a bit more flour you can mold and use your hands. So I think I will take my recipe and try some rolls and such. Keep you all posted as we play with our recipe in motion. The recipe is still in the works.
I just had my boys try it, they really can't tell the difference with the bread. Of course I have three under 5 when hubby comes home I will have him try and update the blog.

**Hubby update. Mine won and hubby said if I added garlic it would make a Great Garlic Bread. I see more time in the kitchen. I'll keep tweaking. Thanks Stephanie....
