Friday's Baking Project

Have you seen this book yet?

I bought it a few days ago and Ethan went through it, book marked about every single recipe in this book.

So we started with the Butterscotch-Chocolate Chip Cookies I won't post the recipe here. But I will say I had to do some subbing, because there are ingredients I just don't use or things we can't afford.

Coconut Sugar was Organic Sugar, Coconut Nectar was Agave, Old Fashioned Oats was oat flour, and Walnut Pieces was Almond meal. No idea what lucuma powder is? Need to go and google that one. So we did the recipe without it. And without psyllium husks. Psyllium does a number on hubby and one of the kids.

This was the photo in the book.

Don't place them this close on the cookie sheet, they double in size. OOPS.

Pretty.

They are all gone, Our recipe made about 16.

Once pulled out of the oven, I heard a bunch of OMGGGGGGGGGGGG coming from the kitchen. And before I know it all 16 cookies were gone, and plans for a double batch tomorrow after mommy buys more oat flour, were made.

In other words Get the Book

Lucuma Powder is made from whole Peruvian lucuma fruit that has been dried at low temperatures and milled into a fine powder. This low-glycemic sweetener contains many nutrients including beta-carotene, iron, zinc, vitamin B3, calcium and protein. Yellow lucuma powder has a unique, maple-like taste that’s a delight in a variety of recipes.

So just another source of sugar

I have never seen it, it's why I as dumbfounded. I wouldn't know where to get it here so another thing to order. Although we didn't miss it in the recipe, so won't be rushing to order it. But I bet the maple is where you get the Butterscotch?
