Banana Monkey Bread
3/4 cup shortening
1 1/2 cups sugar (I only did 1/2 cup sugar)
4 eggs
4 bananas, mashed
3 cups Mock Better Batter mix
1 1/2 tsp baking soda
1 1/2 tsp salt
1/2 tsp cinnamon
1 1/2 tsp vanilla
1/2 cup chocolate chips (optional) (we always do chocolate chips here)
Preheat the oven to 350 degrees. Grease 1 large bread pan. Cream shortening and sugar. Add eggs and bananas. Add in flour, soda and salt, mixing well. Mix in vanilla. Pour into pans and bake for 60 to 75 mins. Cool 10 minutes and remove from pans.
